Step 1
Put the squash into a casserole pan on medium heat with 1 tbsp olive oil, stirring occasionally.

Add the onions, garlic and rosemary to the pan, season and cover for 10mins, stirring regularly.

Step 3
Uncover and cook for 5mins until golden, stirring now and then.
Step 4
Pour in the beans, including juice and crumble the stock cube and water into the pan.

Bring to the boil and simmer for 10mins until the squash is soft and the soup is nice and thick.

Season and drizzle with some extra virgin olive oil

Slice the bread into thick slices, toast it and sprinkle it with the cheese and serve.
