Instructions

Step 1
Preheat oven to 425°F. Coat 12 large muffin cups with nonstick cooking spray. Slice potatoes very thin. Place potatoes in a medium microwave safe bowl. Microwave until slightly softened, 1 minute. Toss potato slices with vegetable oil, salt, and pepper. Arrange potatoes around muffin cups, overlapping if necessary. Extend potatoes 1-2 inches above pan. Bake 15 mins. Remove from oven. Reduce oven temp to 325°F.
Step 2
In a large bowl whisk together eggs, half and half, salt, and pepper. Stir in cheese and ham. Spoon mixture evenly into potato crusted muffin cups. Bake until puffed up and set, 17-20 mins. Cool in muffin cups 10 mins. Loosen quiches and remove to a platter.
