Step 1
Add 225g of the prawns and all other ingredients to the soup maker. Keep back some prawns for garnish. Do not sauté the onion and do not add the crème fraiche at this stage. Ensure you do not go above the max fill line. Set the soup maker to the smooth setting and let it run. When ready to serve add the crème fraiche to individual bowls as a garnish and season with lo-salt and ground pepper to taste if required. Just before serving heat the retained prawns in lightly salted water until cooked through and use as a garnish to sit over the créme fraiche.

Serve with a toasted crusty bread on the side. A good Ciabatta or sourdough is perfect and you choose whether you need butter or not.
