Cauliflower cheese baked potatoes

Instructions

Step 1
Preheat the oven to 180?C/350?F/gas mark 4.
Step 2
Scrub the potatoes, dry them, and rub the skin of each with the oil and a little salt. Pierce the skin of each in three or four places with the tines of a fork, place on a baking tray and bake for 45 minutes-1 hour, depending on the size of the potatoes.
Step 3
While the potatoes are baking, put the cautiflower into a saucepan set over a medium heat, then add the milk and bay leaves. Cook until almost boiling. then reduce the heat to low, and simmer for about 20 minutes until tender
Step 4
When the potatoes are ready, remove them from the oven, slice them open down the middle and use a spoon to scrape out the flesh into a bowl. Add the butter, the cauliflower and the tablespoon of milk, and mash to combine Spoon the mixture back into the empty jackets, place on a baking tray and shower with the cheese. Return to the oven for about 15 minutes until the cheese is melted and golden Finish with a generous twist of black pepper to serve.
