Chicken Souvlaki

Instructions

Step 1
1. Soak sticks in water for at least 10 minutes before skewering (this will prevent them from burning). We forgot to do this but adding tin foil to the ends of the skewers will also help prevent the wooden skewers from burning

2. Thread the chicken pieces, comfortably (about 5-6 pieces) on the skewers/sticks

3. To prep chicken souvlaki, cube/cut the chicken thighs into 1-2 inch pieces and place them in a large bowl, along with the marinade ingredients. Use your hands or tongs to mix really well, then cover with plastic wrap and put in the fridge for 30-60 minutes before grilling

4. Heat grill to medium-high and cook the chicken for about 8 minutes, then flip and grill for another 8 minutes, or until golden on all sides and cooked through
Step 5
5. Remove souvlaki from grill and squeeze 1-2 lemons over chicken along with a big pinch of oregano
Step 6
6. Serve chicken souvlaki with a Greek salad, Greek fries / potatoes, and some tzatziki!
