I like to use a bit more cocoa and peanut butter than my grandmas and mom (1/3 c. vs. 1/4 c.). I also like to use half extra dark cocoa. If you make a double batch, you will need to boil 30-45 seconds extra.

Instructions

Step 1
Measure oats, peanut butter (separately) and set aside. Also have vanilla and measuring spoon ready.
Step 2
Tip: The cookies set quickly after boiling. Having these three items ready is a must.
Step 3
In large saucepan, melt margarine or butter.
Step 4
Add sugar, milk and cocoa as the butter is melting.
Step 5
Stir constantly as mixture warms. Make sure there are no lumps of cocoa.
Step 6
Bring mixture to a full rolling boil (still on medium heat).
Step 7
Once at a full rolling boil, time for 1 minute (1.5 minutes for a double batch). The key is getting the mixture to between 135-145 degrees. If you have a candy thermometer, this might be helpful but not necessary.
Step 8
Remove from heat and stir in the peanut butter and vanilla, first. As soon as peanut butter is melted (no more than about 30 seconds), stir in the oats.
Step 9
Tip: Move quickly if you are dropping by spoon or dipper. It isn't as necessary if you are spreading them in a pan.
Step 10
Drop by spoonful or cookie dipper onto waxed paper. They will be somewhat runny at first. By the time you get to the end, they mixture will be setting up.
Step 11
Tip: If making a double batch, I recommend spreading them in a cake or jelly roll pan. You can cut them into squares after they are cooled.
Step 12
After they are cooled, you can place them in layers in a storage container. You can separate layers with the waxed paper, if desired.
Step 13
This is a great recipe for licking the spatula, but don't burn your mouth. There's no eggs or flour to worry about!
