Chocolate Orange Cake

This modern take on an upside down cake has it all. It is moist and rich with the chocolate base, this is balanced with the lovely tart topping with the citrus orange. Theres a reason why chocolate and orange go together so well and this cake proves it. This cake is equally as delicious with a coffee in the afternoon or as a desert with a dollop of creme fraiche.
I have used blood oranges in the bake, which look really pretty and add extra tang, but it works equally as well with normal oranges, if you can't get hold of blood oranges.

Step 1
Preheat your oven to 175C (355F). Butter & line with non stick baking paper, a deep 20cm metal sandwich tin. Preferably one with a sping formed base for easy removal.

Start by prepping the Oranges, by cutting the top and bottom off each orange, then cut off all the skin and pith (white part) around the orange. Until you have a lovely peeled orange with no outer skin attached. Then slice each orange into 1cm thick slices, making sure you carefully remove any pips in the slices.

Arrange the orange slices in the bottom of the cake tin, so they are touching each other, with as little space between them as possible. Don't worry about filling in the edges as the cake mix will fill in these gaps.

Break up the Dark Chocolate into smaller pieces and melt in the microwave or bain-marie of water. Set aside to cool slightly while you make the cake mix below.

Whisk the Golden Caster Sugar & Baking Fat/Margarine together using an electric whisk or food processor. The mixture should turn pale yellow and look fluffy like firm whipped cream, this will take a couple of minutes of whisking. Then add the 3 Eggs one at a time until each is well combined. Add the Vanilla Paste and whisk into mixture.

Sieve the Self Raising Flour & Coco Powder into the bowl and whisk again on the lowest setting until just incorporated together. Make sure not to over mix at this point, catch the stray flour around the edge of the mixing bowl and gently stir it into the rest of the mixture.

Add the melted Dark Chocolate and gently mix into the cake batter. Then add enough Milk to make the cake mix loose and able to tap off the spoon easily. This will be around 3 tablespoons depending on your flour and coco powder.

Carefully spoon the mixture over the orange slices, making sure not to move them about underneath the mixture. Make sure the top is smoothed as flat as you can with the back of the spatula. Bake on the middle of the oven for 50-55 mins until cooked through, you might need to place some foil on top to stop it burning towards the end.

Leave the cake to cool in the tin for ten minutes, then turn upside down on to a wire rack to cool completely, peeling off the greaseproof paper carefully. Make sure the oranges are now the top of the cake, when you turn it out.
