Step 1
heat oven to 350
Step 2
butter a 9 inch springform pan
Step 3
sift flour, baking powder and salt in a bowl

mix sugar and butter with electric mixer until pale and fluffy, about 3 mns, add egg, vanilla and buttermilk. Mix until combined.
Step 5
gradually mix in flour mixture. Transfer batter to pan. Distribute berries on top of batter and sprinkle demerara sugar overall.
Step 6
bake cake at 350 for 10 mns, then reduce temperature to 325 and bake until cake is golden brown and firm to the touch, about 55 mns.
Step 7
let cool in pan then transfer to plate. Cut into wedges to serve and top with additional strawberries. Serve with whipped cream if desired.
cake will keep 2 days at room temperature.
