These protein bars taste just like sugar cookies, especially with the frosting! They take a few minutes to make and are the perfect treat to prep for the week!

Instructions

Step 1
Combine all the ingredients together until dough forms. If your dough is dry (depending on the protein powder you use) you may want to add a tbsp of melted coconut oil to bring things together to form a cookie dough texture).
Step 2
Frost with your favorite frosting. I use the Simple Mills or Birch Bender brands, to keep this whole-foods based. Or you can make your own cashew frosting. I added a little pomegranate juice to my frosting to make it the pink color. Frost & place in the freezer for an hour or two to firm up before cutting into bars.
Step 3
Store in the freezer & let thaw a few minutes before eating.
