Ingredients

Hot water pastry
Filling
1leek
finely chopped
180gchestnuts
chopped
1carrot
medium, finely chopped
1stick celery
finely chopped
2cloves garlic
¼ cupspelt
¼ cuppearled barley
½ cupgreen lentils
½ teaspoonwhite pepper
1vegetable stock cube
1 teaspoonsalt
1 teaspoonmixed peppercorns
300mlwater
3 tablespoonoats
2 tablespoonrapeseed oil
2 tablespoonsnutritional yeast
Instructions
Filling
Step 1
Add the oil to a pan on a medium heat. Add the leek, celery and carrots and saute until soft
Step 2
Add the chopped chestnut and garlic and cook for 1-2 minutes
Step 3
Add the lentils and grains with the water, stock and white pepper
Step 4
Cook for 25 minutes until lentils and grains cooked, add the oats to soak up the excess water, allow to cool before making the 'pies'.
Pastry
Step 5
Add the suet to the boiling water
Step 6
Place the flour in a bowl and add the hot water and suet mix
Step 7
Combine together with the salt, when cool enough kneed, adding a little more flour if needed.
Step 8
Cut into six balls and roll out into a square about 15cm across
Making the 'pies'
Step 9
Place 3-4 tablespoons of the filing in the middle of the pasty and fold in the same way as a making a dumpling
Step 10
Place on a baking sheet and cook for 25-30 minutes at 180oC
