Instructions

Step 1
Preheat oven to 350°. Heat oil in oven proof skillet. Cook chicken until browned. Add onion, peppers, tomatoes, olives, thyme, zest, and pepper flakes. Cook and stir until onion and peppers are soft. About 5 minutes. Remove from heat. Stir in the riced cauliflower. Sprinkle with Parmesan cheese. Bake until cheese is melted. Let rest 5 minutes before serving.
