Swedish Tea Cakes (Snowballs) - Dirty keto /low carb
Whether you call them Swedish tea cakes, Russian tea cakes, Mexican wedding cookies or snowballs, there’s no denying that they’re essential to bake during the holiday season. They have a shortbread-like dough, filled with chopped nuts, bakes up to a texture that’s sandy and tender, never dry or crumbling to bits.

Instructions
Step 1
Powder sugar (swerve) to roll cookies in.
Step 2
Heat oven to 325.
Step 3
In large bowls combine 1/2 cup powder sugar, butter, vanilla, blend well.
Step 4
Stir in flours (oat fiber/almond flour) and salt until dough holds together.
Step 5
Add in chopped nuts.
Step 6
Shape into 1” balls. Place 1” apart on undressed cookie sheet.
Step 7
Bake 325 for 15-20 minutes until set but not brown.
Step 8
Cool slightly, roll in powder sugar. Cool completely, roll again.
