Instructions
Step 1
First of all, use a grater to grate your raw pumpkin and set aside.
Step 2
In a bowl, whisk egg with olive oil and water.
Step 3
Add your grated pumpkin, Parmigiano and flour and season with salt and pepper.
Step 4
Mix well until smooth.
Step 5
Add your pumpkin mixture to a baking tray, previously oiled and lined with parchment paper.
Step 6
Bake for about 30-35 mins or until nice and golden.
Step 7
Let it cool down a bit, cut it into squares and serve with some rosemary on top.
