Ingredients

3 cupsfrozen potato puffs

2 tablespoonscanola oil

2 tablespoonsunsalted butter

1 cupcarrot
chopped

1 cupparsnip
chopped

½ cupcelery
chopped

½ cupchopped onion

½ cupall-purpose flour

6 cupslow sodium chicken broth

3 cupschicken
diced cooked, or Turkey breast

1 teaspoongarlic powder

1 teaspoononion powder

1 teaspoondried marjoram

½ teaspoondried sage

1 cupfrozen peas

½ cuphalf and half

3 tablespoonsfresh parsley

Instructions
Step 1
1. Preheat oven to 450 degrees Fahrenheit.Cool large baking sheet with cooking spray

2. Place tater tots on the baking sheet. Bake until golden brown and crispy

3. Meanwhile, heat oil and butter in a large pot over medium heat. Add carrot, parsnip, celery and onion. Cook, stirring occasionally until the vegetables start to soften, about 5 minutes.

4. Stern flour and cook, stirring for one minute

5. Stir in broth, chicken, garlic powder, onion powder, marjoram and sage.Bring to a boil over medium high heat, stirring occasionally

6. Reduce heat and simmer until thickened and bubbly, about 2 minutes. Remove from heat

7. Stir and peas and half and half.
Step 8
8. Arrange the potato puffs over the surface of the soup. Serve topped with parsley
