Same day sourdough bread discard recipe
I’m always happy to share! Hope it makes sense
600 g bread flour
1 T salt 4g
1 3/4 cup warm water/406 ml
1 T sugar
2tsp of yeast
1 cup sourdough starter discard/250 g
Mix all indigents together. Let sit covered for 30 min. It’ll be sticky.
Knead dough to form a unified ball ( or use your preferred high hydration method). Put into dry bowl and cover with plastic wrap.
Place in warm area like oven with light on. Proof dough for 3.5 hrs or until doubled. Take out of oven and leave on counter.
Preheat oven to 500 for 45 min with Dutch oven and lid, in it.
After 15 min shape the dough and try not to deflate it too much. Put into a bread proofing basket and cover with lightly oiled plastic wrap for 2nd rise -30 min.
When oven is at temp, turndown to 450. Add score then bake for 45 min.
Dutch oven- bake with lid on for 20 min. Then off for 25.
No dutch oven method
throw in 1/2 cup of ice in bottom of the oven or a pan of hot water. Don’t open the oven door until 45 min or when browned and done.
