I love getting a creme brulee when I go out to restaurants but after learning how to create this magic goodness in culinary school and I had so much fun creating it. i knew I wanted to share it with all of you.

Instructions

Step 1
Preheat oven to 325 degrees F.

Scald cream with split vanilla bean or extract.
Step 3
Whisk sugar and eggs yolks together until pale in color
Step 4
Temper the scalded cream into the eggs and sugar and mix until combined.
Step 5
Strain the custard through a fine mesh strainer into a measuring cup or container with a pour spout.
Step 6
Arrange ramekins in a 2 inch deep roasting pan or similar. Fill each ramekin ¾ full with custard.
Step 7
Add enough hot tap water to the roasting pan to come ⅔ up the sides of the ramekins
Step 8
Cover pan with foil, leaving a 1 inch vent on each side for steam to escape.
Step 9
Bake until the custards are firm with a slight jiggle in the center.
Step 10
Remove the pan from the oven and allow to cool before you handle them.
Step 11
Refrigerate covered for at least 4 hours or up 2 days
Step 12
Sprinkle tops with granulated sugar an torch until golden brown.
