Paprika Chicken | Slimming & Weight Watchers Friendly

This super-easy Paprika Chicken can be cooked in just one pot, which means there's very little faffing around and hardly any washing up either. We've combined sweet and smoked paprika in this dish to give it a slightly smoky flavour, but if you only have one kind then you could also use 2 tablespoons of the same paprika instead. Serve with rice or mashed potatoes for a super hearty, comforting dinner.

1onion
peeled and diced
2garlic cloves
peeled and crushed
1red pepper
deseeded and sliced
1yellow pepper
deseeded and sliced
600gdiced chicken breast
1 Tbspsweet smoked paprika
1 Tbsppaprika
regular
¼ tspfreshly ground black pepper
1 tspdried oregano
2 Tbsptomato puree
400mlchicken stock
1low-salt chicken stock cube
1reduced-salt chicken stock pot
400mlwater
75greduced-fat cream cheese
Instructions
Hob-top Method
Step 1
Spray a frying pan with low-calorie cooking spray and place over a medium heat. Add the onion and fry for 5 minutes until lightly golden, then add the garlic and peppers and cook for a further 2 minutes. Add the diced chicken to the pan and brown on all sides for 4 minutes.
Step 2
Add the smoked paprika, paprika, black pepper, oregano and tomato puree and give everything a stir. Add the 400ml stock to the pan, reduce the heat so that the mixture is just bubbling and simmer for 25 minutes until the sauce has reduced.
Step 3
Remove from the heat and stir through the cream cheese until dissolved and combined. Serve with your choice of accompaniment.
