Ingredients

1 ½ cupcabbage
shredded
1 ½ cupscarrot
shredded
0.5red onion
diced
2 x 15 ozcan unsalted chickpeas
4 tablespoonswhite miso paste
½ cupqueso cheese
or ricotta or cottage
2 teaspoonssmoked paprika
2 teaspoonschili powder
2 tablespoonsgolden sugar
2eggs
1 cuppanko bread crumbs
seasoned pepper
to season patties
¼ cuppotato starch
½ cupshredded Italian cheese
Instructions
Step 1
Finely shred cabbage, carrot, & red onion using food processor or vegetable chopper. Put in bowl. Rinse and drain garbanzo beans and put into bowl. Add white miso paste. Using potato masher, mash beans with veggies and bean paste. Add 2 beaten eggs, panko bread crumbs, potato starch, cheese, seasonings, sunflower seeds. Mixture should feel sticky. Keep adding potato starch until you have desired consistency. It should be sticky. Form into medium sized balls, place on cookie sheet lined with parchment paper. Flatten each pattie for desired size, sprinkle with seasoned pepper & drizzle with olive oil. Bake at 400 degrees until patties are crisp and golden brown.
