Veggie Bowl
2 cupsbrown rice
4carrots
peeled and chopped
16 ozBrussels sprouts
10 ozbroccoli florets
2sweet potatoes

4italian sausages
4vegetarian Italian sausages
2 Tbspolive oil
1 tspmushroom seasoning
½ tspgarlic powder
½ tsppaprika
salt
pepper
4 ozfeta
Tofu Sauce
Instructions
Step 1
Cut veggies & sausage to your liking & add to baking sheet.
Step 2
Toss with seasonings (as much as you want) & olive or avocado oil.
Step 3
Blend tofu sauce ingredients until a consistency you like. Don’t be afraid to add more/less seasoning based on taste.
Step 4
Roast vegetables in 400 degree oven until crispy and sweet potatoes can be poked with fork, about 20-25 minutes.
Step 5
Top rice with vegetables, tofu sauce & feta.
