Instructions

Step 1
Prepare rice according to package instructions.
Step 2
Place chicken in instant pot.
Step 3
Add in onion, ginger, garlic, soy sauce, sugar, ketchup, vinegar, apple juice, and chicken stock. Stir everything to combine.
Step 4
Cook on high pressure for 12 minutes. Let pressure release naturally for 5 more minutes, then manually release any remaining pressure.
Step 5
In a small bowl, combine corn starch and water. Set Instant Pot to Sauté high, and stir in the cornstarch mixture. Allow to thicken for 3 minutes.
Step 6
Serve over rice, and top with carrots or vegetables.
