Instructions
Step 1
- Rub chicken with oil and seasonings listed
Step 2
- Place chicken on hot pan and sear for a couple minutes on each side
Step 3
- Transfer chicken to a baking dish, cover and bake at 375F for 30-40 minutes.
Step 4
- Add oil, onion and garlic to the same pan and sauté until golden
Step 5
- Add carrots, tomato and cilantro and cook down
Step 6
- Add bay leaves, cinnamon, cardamom and cloves
Step 7
- Use a baster to extract broth from chicken and add in the pan
Step 8
- Add rice and seasoning, and mix well
Step 9
- Add water and let it come to a boil
Step 10
- Cover and turn heat low for 15-20 minutes
Step 11
- Serve rice with chicken and enjoy
