Becca's Cinnamon Buns
A free standing mixer is best with a dough hook attachment. Otherwise prepare to get some guns with hand kneading 💪Roasting tin (sides need to be a couple of inches deep) - lined with baking paper

Ingredients

For the dough
100gunsalted butter
200mlmilk
1 tspsalt
250gplain flour
250gstrong white flour
1 ½ tspfast action yeast
1 spground cardamom
4 Tbspcaster sugar
2eggs

Instructions
Step 1
Sunflower oil, for greasing - can be rapeseed or whatever too - put some oil in a bowl and then spread all around with kitchen towel.
Step 2
Mix dry dough ingredients in a bowl (apart from fast action yeast)
Step 3
Heat up milk in the microwave until warm - usually a min
Step 4
Mix eggs, butter, yeast and milk together, when there are small bubbles forming from the yeast, add to the dry ingredients and mix.
Step 5
The dough will be quite sticky so it's easiest to use a standing mixer and attachment and knead for 5-10 mins on the medium setting.
Step 6
If you don't have a mixer; mix at first with a fork until it comes together then turn out onto a lightly floured surface and knead for 15 mins (you don't want to add to much flour and dry out the mixture).
Step 7
Once the dough is fairly smooth and elastic pop it into a clean bowl that has been oiled and cover with cling film.
Step 8
Allow to prove for an hour in a warm place until doubled in size ( you can prove it on the side it'll just take longer and for a really nice flavour prove it in the fridge overnight)

While waiting, mix all your filling ingredients together untill incorporated, if the mixture looks dry it needs more mixing!
Step 10
Once proved knock back the dough by kneading it again for 5 mins by hand.
Step 11
Roll out the dough into a rectangle until around 3mm in thickness, then spread the cinnamon filling as evenly as you can on top of the dough.
Step 12
Roll the longer sides of the dough bit by bit into a roll.
Step 13
Cut the dough into pieces around 2.5 cm thick, place swirl side up into a baking tray then glaze with beaten egg

Prove again in a warm place for half an hour.
Step 15
Heat up your oven to 180 and cook for 20-25
Step 16
To check the buns are cooked simply tap it - if it sounds hollow it's done!
Step 17
Once the bread is out of the oven, mix together your icing sugar and a dash of water until smooth, if really thick add a little more water.
Step 18
Then pour topping over your cinnamon buns and let it cool before eating!
