Instructions

Step 1
Mix flour, corn starch, water, sugar for 6 to 7 mins with medium high mixer
Step 2
Add egg and baking powder. Mix well. Rest for 1 - 3 hours
Step 3
If using large pan, use iron plate under the pan. If using small pan, use 2 stove rack.
Step 4
Put water and baking soda right before cooking the batter. If batter is cooked in batches, divide baking soda accordingly.
Step 5
Heat pan in low heat. Once the pan is hot enough but not smokey (water sizzling if sprinkled on top), pour the batter. Wait until all bubbles form in the surface. Sprinkle with sugar. Close the lid until thoroughly cooked.
Step 6
Add butter right after martabak is done.
