These Crumbl peanut butter and jelly cookies are a childhood favorite. They are made with a thick peanut butter base and then topped with a peanut butter buttercream and a raspberry jam swirl.

Instructions

Preheat oven to 350°F

Step 1
Line baking sheet with parchement paper; set aside.
Step 2
Cream butter, peanut butter, brown sugar, & sugar. Add eggs & vanilla; mix until combined.
Step 3
Add flour baking powder, baking soda, cornstarch, & salt; mix just until flour mixture disappears.
Step 4
Using lg. cookie scoop, portion out 8 equally-sized cookie dough balls. Roll between palms; gently flatten them to about ⅔” . Freeze discs (15 min.)
Step 5
Bake (12-13 min.) (The cookies will look slightly underbaked, but will continue baking on cooling baking sheet.) Cool completely on baking sheet.

Peanut Butter Buttercream

Step 6
Cream butter, peanut butter, & powder sugar together in mixer until light & fluffy.
Step 7
Pipe peanut butter frosting around cookie in swirl motion then fill the rest of the swirl with jelly; enjoy!
