Instructions

Step 1
In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until well combined. Add the egg, egg yolk, and vanilla and whisk until smooth.
Step 2
In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and stir with a wooden spoon or a rubber spatula until a soft dough forms. Fold in the chocolate chips.
Step 3
Cover the dough with plastic wrap and refrigerate for at least 2 hours or up to overnight.
Step 4
Preheat oven to 325°F (165°C). Line two baking sheets with parchment paper or silicone baking mats.
Step 5
Scoop about 2 tablespoons of dough per cookie and roll into balls. Place them about 3 inches apart on the prepared baking sheets. Flatten slightly with your fingers if desired.
Step 6
Bake for 10 to 12 minutes or until the edges are lightly golden and the centers are slightly underbaked. Do not overbake as they will continue to cook on the baking sheets.
Step 7
Let the cookies cool on the baking sheets for about 10 minutes before transferring them to a wire rack to cool completely.
