Step 1
In a large skillet, heat olive oil over medium high heat. Add the garlic; cook for 1 minute or until golden, stirring frequently. Transfer the garlic to small bowl, set aside. Add the butternut squash noodles to the hot skillet. Cook, covered, for 5 minutes, stirring occasionally. Add the kielbasa to the skillet. Cook uncovered, for 5 minutes more or until the sausage is heated through and noodles are tender.
Step 2
Return the garlic to the skillet. Gently stir in the spinach to wilt. Season to taste with salt and pepper. Top servings with pecans.
