Step 1
Heat the oil over medium heat in a Dutch oven or high walled skillet and sauté the vegetables. Add the tomato sauce, garlic, mint, and wine. Stir then add the rice, salt, hot sauce, sausage an enough water to cover the rice by 1 inch. Bring the water to a boil then turn the heat to low so the bottom does burn. Cook uncovered until most of the liquid is gone then cover and turn heat to the lowest setting and cook for 45 minutes or until you’re hungry whichever comes first.
