Instructions
Step 1
Roast half of veggies in baking sheet with generous oil at 350 until BLACK
Step 2
Add roasted veggies to blender with tomato sauce and blend smooth
Step 3
Cook beef
Step 4
Remove beef but keep drippings in pan
Step 5
Add raw veggies and cook until tender
Step 6
Add rice and fry until darkened from drippings
Step 7
Add water and sauce
Step 8
Add beef back to pan
Step 9
Let simmer until reduce stirring to keep rice from sticking
Step 10
Top with cilantro and lime juice
Step 11
Serve with chips or tortillas
