Ingredients

4 tablespoonsvegetable oil
1onion
medium, chopped
2 poundsTomatoes
large, ripe, chopped
6 cupschicken broth
1 cupsRoasted Chicken
shredded, See Note 1 Above
1 tablespoonground cumin
2 tablespoonschili powder
1 tablespoonchopped garlic
1can enchilada sauce
1 tablespooncilantro
chopped
2 teaspoonsGreen Chilies
chopped
1 teaspoonworcestershire sauce
2Corn Tortillas
cut in strips
salt
to taste
black pepper freshly ground
to taste
1 cupCheddar Cheese
shredded, to serve
corn tortilla strips
fried, to serve
Instructions
Step 1
Add oil to a very large saucepan. Heat until shimmering over medium heat.
Step 2
Add onion. Sauté in hot oil until transparent.
Step 3
Add tomatoes. Cook, stirring until tomatoes are softened.
Step 4
Remove from heat and allow to cool to warm.
Step 5
Add tomatoes and onions to a blender or food processor. Purée until smooth. Return mixture to pan.
Step 6
Add all other ingredients, except tortilla strips, salt and pepper, cheese and fried tortilla strips.
Step 7
Simmer, stirring occasionally, for about 30 minutes.
Step 8
Add tortilla strips and heat, stirring occasionally, for about ten more minutes.
Step 9
Taste. Add salt and pepper, to taste, if needed.
Step 10
Serve with cheese and fried tortilla chips, to top (See Note 2 Above).
