Instructions

Step 1
Cut the broccoli into florets. Boil a pot of water and season it with salt and sugar. Throw in the broccoli and cook for 8 minutes.
Step 2
In the meantime, mince the garlic into a large pan sprinkled with olive oil.
Step 3
After the broccoli is done, spoon it out and set about 12 florets aside. Throw the rest into a blender along with 1/4 cup of the broccoli water. Blend it thoroughly, adding some more water if needed.
Step 4
Cook spaghetti according to the package instructions in the leftover broccoli water. Add some more water and/or salt if needed.
Step 5
Heat up the pan with the garlic and fry until it’s crispy. Add the blended broccoli. In the meantime, chop the blue cheese into pieces and add it to the pan. Stir until the cheese melts, then add the cream. Season with pepper. Continue stirring until everything is thoroughly mixed.
Step 6
Drain the pasta, and either add it to the sauce and mix, or put it on plates and pour the sauce on top. Sprinkle with the leftover broccoli florets.
