Very Green Pasta with Crispy Leeks

Just a healthy green pasta! Heavy on the greens, creamy and topped with a few cheeky crispy leeks - perfect for weeknights. I made this pretty healthy but adjust the ingredients to your tastes!

Ingredients
5 servings
SAUCE
⅓ cupsunflower seeds
¼ cupolive oil
3cloves garlic
¼ cupvegan parmesan
1 tspcapers
0.5 bunchbasil
150gspinach
0.25 bunchparsley
1zest of lemon
1 cuppasta water
crispy leeks
to serve
Instructions
Step 1
Begin by crisping up your leeks. Silce leek thinly, and pull rings apart. Rinse and pat dry in some paper towel. Toss in a few spoonfuls of cornstarch. Heat some olive oil in a pan - shaking off any excess, fry your leeks on medium heat til golden and crispy. Drain on some paper towel and set aside.
Step 2
Boil the water and add the salt. Once boiling, add pasta - cooking for 2 minutes less than the packet instructions. Add peas during the last minute and reserve 1 cup of pasta water before draining pasta and peas.
Step 3
In a blender blend together all sauce ingredients until very smooth. Taste and adjust to your liking. Season with salt and pepper.
Step 4
Pour sauce into a pan and heat for a few minutes before adding your pasta and stirring until hot through.
Step 5
Serve with topped with a drizzle of sour cream, olive oil, crispy leeks, chilli flakes and a wedge of lemon!
