Instructions
Step 1
Cut your carrots into small pieces and boil for 20 mins or until fork tender, drain and let them cool down completely.



Step 2
In a food processor, add your carrots and flour and mix everything for 30 seconds or until you form a dough.


Step 3
Divide your dough into 4 parts and roll out each part into a long sausage.
Step 4
Cut your “sausage” into pieces of approximately 2cm then boil in some salted water for about 4/5 mins or until they come to surface.


Step 5
In the meantime, melt butter in a pan, add your boiled fresh pasta and toss well over the heat to combine all the flavours together for a minute.



Step 6
Turn off the heat, add grated Parmigiano and black pepper and stir until creamy, adding some pasta water if necessary. Buon appetito!
