Instructions

Step 1
Preheat oven to 350°F/180°C. Grease a muffin pan or line with cupcake liners.
Step 2
Combine sugar, banana, egg, peanut butter, salt and oil in a bowl. Mix well to combine until smooth; use an electric mixer if you have one.

Step 3
Add flour, baking soda, and baking powder. Mixx gently until just combined with no lumps. (Low setting on electric mixer, or just use a wooden spoon)

Optional: Add up to 1/2 cups of oats, chocolate chips, or nuts (or a combination!)
Step 5
Put a heaping 1/4 cup of the batter into each muffin tin.
Step 6
Bake for 15-20 mins or until toothpick comes out clean.
