Instructions
Step 1
Coat beef in flour salt and pepper.
Step 2
Add generous amount of olive oil to pot over medium heat
Step 3
Add beef and sear for 20 minutes. Stirring frequently. The goal is to create a very thick rue. Take your time and make sure all side of beef are seared. You are not trying to brown. We are creating a thick rue.
Step 4
Chop onions and garlic and add to thick beef rue mixture. Sautee for 3-5 minutes or until fragrant
Step 5
Add Guinness, wine, stock, bay leave and thyme. Work to scrape up the a bit of the fan from the bottom of pot. Bring to simmer and reduce heat to low. Simmer for 2 hours
Step 6
After 2 hours, chop celery and carrots and add. Simmer for 1.5 hours
Step 7
Chop potatoes and add. Simmer for 1 hour
Step 8
Add frozen vegetables and simmer for 30 minutes. If you want a thicker consistency, mix 1 teaspoon cornstarch with water and add and summer for 10 minutes.
Step 9
Serve with bread and butter and enjoy! I like to make a big portion and freeze the leftovers!
