Instructions

Step 1
Use butter or ghee to grease a 7-inch baking dish that will fit in your 3-quart air fryer.
Step 2
Add the shredded potatoes and bacon to the dish and stir to combine.
Step 3
Place the dish inside the basket of the air fryer and bake at 370°F for 10 minutes, stirring once halfway through.
Step 4
Combine the eggs, cheese (if using), milk, butter, sriracha, and baking powder in a blender and puree on high for 30 seconds.
Step 5
Stir in the everything bagel seasoning.
Step 6
Pour the egg mixture over the potatoes and stir to combine. Bake in the air fryer at 370°F for an additional 9 min- utes, stirring every 3 minutes (see Note). The eggs should be softly scrambled. They will continue to cook slightly while plating.
Step 7
Stir in the chopped chives and divide the eggs among 4 plates.
Step 8
Garnish with the tomato, avocado, and Sriracha.
Step 9
Note: If you don't have an air fryer, you can make the scramble on the stovetop.
Step 10
Heat a large cast-iron skillet over medium-high heat.
Step 11
Add 1 tablespoon butter, the shredded potatoes, and bacon and cook, stirring occasionally, until the potatoes are lightly golden, about 7 minutes.
Step 12
Reduce the heat to medium and add the blended egg mixture.
Step 13
Use a spatula to stir the eggs constantly until they are softly scrambled, about 3 minutes.
Step 14
Follow the directions for step 5 above to finish.
