New years soup recipe with black eyed peas, cabbage, pork, and rice for luck and prosperity in the new year. Also a nice easy recipe for when you are recovering from the night before.

Ingredients
12 servings
1 head green cabbage
3 cloves of garlic

1 packagesmoked sausage

2 tspsalt
to taste

2 tsppepper
to taste

1 tsppaprika
optional

3bay leaves

1 x 8 ouncecan tomato sauce
1 14.5 ounce can of corn
1/2 cup prepared rice per person
Instructions
Step 1
Dice the garlic and onions and set aside



Step 2
Open the cans of corn and black eyed peas and put contents into a strainer. Thoroughly rinse beans and corn to remove can juices

Step 3
Rinse cabbage thoroughly. Remove core and slice whole cabbage into bite sized rectangles to look like the cash you will earn in the new year . If adding carrots, peel and slice them now.



Step 4
Slice sausage into round small pieces to be “coins” earned during the year


Step 5
Either using a Sauté function of a slow cooker or in a medium sized skillet, heat butter over medium heat until melting


Step 6
Add onions and carrots and sauté to sweat the vegetables, about 2-3 minutes. Add garlic and sauté another 30 second to 1 minute




Step 7
Add salt, paprika, and pepper. Sauté an addition 20-30 seconds
Step 8
Transfer onions, carrots, and garlic to close cooker. Add in ham bone and bay leaves to bottom of slow cooker.





Step 9
Add in corn, black eyed peas, sausage, cabbage, tomato sauce and chicken broth. Stir to combine then place lid on slow cooker and cook on low for 3-4 hours. At the end of cook time, taste to check salt and pepper levels and adjust to your liking. You may also want to add Cajun seasoning, hot sauce, or Worcestershire sauce to taste.

Step 10
When soup is ready to serve, pour over about 1/2 cup cooked rice per bowl. It is better to add rice only to what is being eaten that day to avoid the rice getting soggy in the soup or sucking up too much brother.
Step 11
Serve with cornbread on the side for even more good luck. Discard ham bone and store leftovers securely in the fridge for up to 5 days. Can easily be frozen and reheated as well.
