Smoked Tofu Caesar Salad

Instructions

Step 1
Cut the smoked tofu into strips 2 in long and 1/2 in thick. Fry them for 5 minutes in a frying pan with the sunflower oil until golden.
Step 2
Wash and dry the salad and the herbs. With the help of a vegetable peeler, shave 1 oz of the Parmesan into big strips. Shred the other oz of Parmesan for the dressing. Toast the bread slices.
Step 3
Make the dressing. Peel the garlic and put it through a garlic press or mince it. Whisk the yogurt with the crème fraîche, the mayonnaise and the mustard. Mix in the lemon juice, the garlic and the shredded Parmesan. Season to taste with salt and pepper.
Step 4
Put the lettuce in a large salad bowl, add the smoked tofu, pour on the dressing and mix well.
Step 5
Chop the parsley and the chives. Rip the slices of bread into pieces like large croutons. Sprinkle the salad with the chopped herbs, the bread and the shaved Parmesan. Serve immediately.
