Quinoa and Pastrami Stuffed Capons:

Instructions

Step 1
Preheat oven to 375
Step 2
combine quinoa with sliced pastrami and scallions
Step 3
In a small bowl, whisk together olive oil, soy sauce, mustard, honey, garlic, cayenne pepper, salt and pepper.
Step 4
Pour half of the dressing into the quinoa and toss
Step 5
Turn each capon over on a working surface. Take a Tbsp of the quinoa pastrami mixture and place into chicken
Step 6
Add duck sauce to the rest of the dressing and pour over chicken and bake for 1 1/2 hour
