While the pasta is cooking, chop up the tomatoes, sundried tomatoes, avocado & spinach.

Drain the pasta and leave to cool.

Once cool, place the pasta in the Tupperware bowl. Top with spinach, tomatoes, sundried tomatoes & avocado. Drizzle with the brine/oil. Sprinkle the parmesan & top with pepper.
