Ingredients

2 Tbspolive oil
½ cupyellow onion
finely diced
½ cupcarrots
finely diced
¼ cupcelery
finely diced
2cloves garlic
minced
2 x 16 ozTurmeric Ginger Bone Broth
cartons, or 1 32 oz chicken bone broth
1 cupisraeli couscous
or pearl
1 cupchicken
diced, or rotisserie
salt
to taste
pepper
to taste
¼ tspturmeric
if using regular bone broth
½ tspthyme
if using regular bone broth
Instructions
Step 1
Heat oil in small pot
Step 2
Add onion, carrot, celery, garlic and pinch of salt
Step 3
Cook, stirring often, until vegetables are tender (4-5 mins)
Step 4
Add bone broth and bring to simmer. Add turmeric if using.
Step 5
Stir in couscous and cook until tender, stirring frequently (about 8 mins)
Step 6
Add chicken and heat through
