Roasted Lemon Pepper Fish and Veg w/ Quinoa

Instructions
Step 1
Preheat oven to 400°F
Step 2
Put fish on a baking sheet
Step 3
Drizzle with oil, sprinkle w/ lemon pepper, and place lemons on top
Step 4
Put carrots and broccoli on another baking sheet, drizzle with oil, and season with salt
Step 5
Cover baking sheets with aluminum foil (shiny side in) and bake at 400°F for 20 min
Fish is done when it easily flakes and is opaque
Step 6
Mix quinoa and water in a pot. Bring to boil and turn down heat to low.
Step 7
Cook until all water is absorbed, about 15-20 min
Step 8
Serve quinoa with oil added
