Tomato Orange Bisque

Learned this recipe on a Culinary tour. Unusual. but AMAZING flavor!!! For a delightful twist, you can serve this chilled as well. Awesome a hot day!

Instructions

Step 1
In a Medium pot, over medium heat, heat the olive oil. Add the onion and carrot, and saute. Stir occasionally until translucent, about 5 minutes.
Step 2
Add the broth, tomatoes, orange juice, bay leaf, and thyme. Simmer partially covered for about 40 mins.
Step 3
With a slotted spoon, remove the bay leaf. Puree in batches in food processor or blender until smooth. Also if you have a hand blender, leave in the pot to mix.

Step 4
Put the soup back in the pot, add the Coco Milk, orange zest, salt and stir to blend. Reheat over medium heat, stir occasionally.
