Instructions

Step 1
Marinate chicken by placing in zip-top bag, & drizzling with olive oil, rosemary, lemon slices, salt, & pepper. Squeeze to combine; refrigerate (30 min.- 4 hr.)

Preheat oven to 350°F

Step 2
Spray 8”x8” baking dish with nonstick spray.
Step 3
Preheat cast-iron pan over med.-high. When hot, drain each chicken breast of excess oil, & place each in pan, skin side down. (It's fine to sear the lemon slices with the chicken.) Sear on each side (4-5 min.) (don’t worry whether chicken is cooked all the way through.) Once both sides are brown, move chicken to baking dish.
Step 4
Bake (20 min.) Temp should read 165°F. If it isn't, return it to oven in 5 min. intervals, & re-test.
Step 5
Let rest (5 min.) & serve.
