500gground chicken
30mlcoconut oil
3cloves garlic
minced
2Thai bird's eye chilies
minced, adjust to taste, optional
1red bell pepper
thinly sliced
1onion
thinly sliced
½ cupThai basil leaves
loosely packed
300gjasmine rice
cooked, microwaveable bag

Instructions
Step 1
Finely chop onions and peppers, set aside. Crush and chop garlic, set aside. In a small bowl, mix the fish sauce, soy sauce, oyster sauce, water and sugar, then set aside. Pick basil leaves from stems, set aside (no need to cut).
Step 2
Heat the coconut oil in a large skillet or wok over medium-high heat. Stir in the red bell pepper and onion, and cook for 2-3 minutes, or until the vegetables are slightly softened.
Step 3
Add the ground chicken to the skillet and cook for 5-7 minutes, breaking it up into small pieces, until it's cooked through.
Step 4
Add the minced garlic and chilies, and cook for 30 seconds, or until fragrant.
Step 5
Pour the sauce mixture into the skillet and cook for 1-2 minutes, stirring to combine.
Step 6
Remove the skillet from the heat and stir in the Thai basil leaves until they are wilted.
Step 7
Serve the Thai basil chicken over steamed jasmine rice.
