Ingredients
6 servings
1 tablespoonbutter
½ cuponion
finely chopped
½ cupcelery
finely chopped
1jalapeno pepper
medium, seeded and minced
2 tablespoonsall purpose flour
3 cups2 % milk
2 cupsskinless boneless chicken breasts
chopped, roasted
1 x 14.75 ouncecream style corn
can
1 ½ cupsfrozen corn kernels
or 3 ears of fresh corn
1 ½ teaspoonsfresh thyme
chopped
½ teaspoonsalt
⅛ teaspoonground red pepper
Instructions
Step 1
Melt the butter in a large pot over medium heat. Add the onion, celery, and jalapeño; cook for 3 minutes or until tender, stirring frequently.
Step 2
Add in the flour; cook 1 minute, stirring constantly. Stir in the milk and remaining ingredients.
Step 3
Bring to a boil, and cook until thickened (about 5 minutes.)
