Coconut cupcakes with coconut whipped cream icing

Instructions

3 eggs, room temperature

1 cup full fat coconut milk

1 teaspoon vanilla

2 1/4 cup flour

1 teaspoon salt

1 teaspoon baking powder

1/2 cup dessicated coconut

Preheat oven to 350 degrees

Beat butter till light and fluffy, about 3 minutes.

Add sugar and beat another 3 minutes

Add eggs one at a time, beating 30 seconds between additions

Combine dry ingredients

Combine coconut milk and vanilla

Add 1/3 dry ingredients, then 1/2 coconut vanilla mixture

Continue adding and mix just till combined

Fold in coconut

Scoop batter into lined muffin cups about 1/2 to 3/4 full.

Bake 18 to 22 minutes, rotating pan after 15 minutes

Cool a minute or two and take out of pan before frosting

Frost with coconut cream frosting( recipe in separate post) and top with toasted coconut.
