Instructions
Step 1
Brush chicken on both sides with olive oil, seasoning to taste with salt and pepper
Step 2
Grilled chicken until done. Prepare lemon butter sauce while chicken is grilling.
Step 3
Sauté onion and garlic in 2 tablespoons of butter until soft and fragrant
Step 4
Add white wine and lemon juice reduce heat to medium low and simmer 10 minutes
Step 5
Add remaining 6 tablespoons of butter a little at a time until it melts and mixture is emulsified
Step 6
Add chopped sun-dried tomatoes and basil heat until hot but do not overheat or sauce may break
Step 7
Top nearly done chicken breasts with 2 ounces each of the goat cheese until cheese warms and softens
Step 8
To serve, spoon lemon butter sauce over chicken breast. Enjoy!
