Step 1
Here is how to prepare a perfect roast chicken: remove the chicken from the refrigerator and let it sit at room temperature for about half an hour. After it has rested place it in a roasting pan that can comfortably hold it. Fill the cavity with two lightly crushed poached garlic cloves, a couple of sprigs of rosemary, and a few sage leaves. Prepare a mince of fresh rosemary, sage, thyme, and marjoram.
Step 2
Tie the legs of the chicken with kitchen twine so it will hold its shape while cooking. Brush it with plenty of oil, then "massage" and sprinkle with the chopped herbs, a pinch of salt, and ground pepper. Place in a preheated oven at 190° for about an hour. The exact cooking time will depend on the weight of your chicken: you will need to count about 50 minutes for a pound.
Step 3
While cooking occasionally take a few tablespoons of liquid from the cooking juices and pour it over the chicken. Your chicken will be cooked through when you stick a skewer or toothpick into the thigh and no blood or pinkish liquid comes out. Remove the roast chicken from the oven and serve immediately.
