1kgpork chops
2tins Diced tomatoes with onion
1 Tbsptomato paste
1 tspdijon mustard
2 tspwholegrain mustard
1 tspsugar
1 Tbspsalt
½ tspblack ground pepper

Step 1
Seer lightly salted pork chops in frying pan. Remove and place single layer of the chops in a casserole dish, allowing to rest.
Step 2
In the same frying pan using a medium heat, add remainder of ingredients. Bring to a simmer while stirring regularly for approximately 5 minutes.
Step 3
Pour sauce over pork chops in casserole dish, ensuring good coverage of the meat. Cover dish with aluminium foil/lid and place in preheated oven at 150°C for 2½ hours.
Step 4
Once cooked, remove pork chops from dish and cover with aluminium foil. Allow to stand. Pour sauce into a saucepan and allow to reduce over a medium-high heat for 10 minutes. (OPTIONAL)
Step 5
Serve by pouring sauce over pork chops and butter mash potato with a side of steamed baby peas.
