20chicken wings
drumstick, only
300mlbuttermilk
1 tablespoonhot sauce
1 tablespooncayenne pepper
230gplain flour
1 ½ teaspoondried thyme
1 ½ teaspoondried basil
2 teaspoonsalt
4 tablespoonpaprika
1 teaspoondried oregano
1 tablespooncelery salt
2 tablespoongarlic salt
1 tablespoonblack pepper
1 tablespoonmustard powder
3 tablespoonwhite pepper
1 tablespoonground ginger
Instructions
Step 1
Add wings to a bowl and pour over buttermilk, hot sauce and cayenne pepper. Mix all together and refrigerate for 1 hour.
Step 2
Add the remaining herbs and spices to the flour and combine. Pour into a shallow dish. Fill a bowl with water and put next to the dish.
Step 3
Two or three at a time drop the wings into the flour mix and completely cover.
Step 4
Pick up each wing by the tip and quickly fully dunk into the water. Then back into the flour for another coating.
Step 5
Fry the wings in batches for six minutes and 160 degrees.
